This healthy shrimp recipe is actually my mother's recipe. Growing up having this dish and acknowledging the unique taste of it always fascinated me because of the unique combo. 

This is an amazing option for those who constantly look for yummy taste and healthy greens on their plates. Try this if you are new to cooking as it is an extremely easy recipe for beginners.

Ingredients:

1. Pumpkin Shoots: 500 gms
2. Shrimp: 100 gms
3. Onions:1, finely chopped
4. Tomatoes: 2, finely chopped
5. Dry Chilli:2
6. Ginger and Garlic Paste: 1 teaspoon each
7. Turmeric Powder: 1/2 teaspoon
8. Cumin Seeds: 1 teaspoon
9. Oil: 4 tablespoon 
10. Salt: as per taste

Method:

Step 1:

Start off this healthy shrimp recipe by washing the shrimp first lightly to get rid of the unwanted dust. Now, heat the pan and pour 1 tablespoon of oil to fry the shrimp on medium flame. Fry the shrimp for 1-2 minutes and pour it into a bowl and set it aside. 

Step 2:

Add the remaining 3 tablespoon of oil in the pan and add cumin seeds. After the cumin seeds start to crackle, add the finely chopped onions along with the dry chilli. Keep cooking the onions until it turns into a light brown colour. 

After this, add the ginger and garlic paste and stir it for 1 minute. Then add, turmeric powder and stir it once. After this, go ahead and add the finely chopped tomatoes. 

Step 3:

Keep stirring the mixture for a minute then add the pumpkin shoots, giving the dish a proper stir for 1 minute on  medium flame. Cover the lid for 2 minutes for the pumpkin shoots to cook well. 

After those 2 minutes are up, open the lid and give everything a proper stir. (Note that if there is some remaining water in the pan, make sure you cook the pumpkin shoots for 1 more minute, keeping the lid open). 

Step 4:

Now, finally add the fried shrimp with the pumpkin shoots and mix everything well for a minute and turn off the gas.

Bonus Tips:

1. Water is not added in this healthy shrimp recipe, because the dish is cooked on low to medium flame. More so, when you cook the dish on high flame, the food seems to just be cooked on the outside, keeping the inside raw, which is quite unhealthy.
