Nepali Sukuti Recipe
Sukuti is quite an acquired taste I would say.
For people who love it, they agree to give an arm and a leg any day for sukuti (my husband for example.)
However, for people who are not a big fan of sukuti, well let's just say, the kitchen becomes a hell hole for them (my daughter).
Giving my take on this nepali sukuti recipe, I assure you this dish is going to amaze all sukuti lovers.
Using my normal spices which keeps the authentic taste of sukuti intact, this sukuti recipe is a dish with its unique flavor.
Frying the sukuti first, you get that crispy and crunchy feel and then with the fried sukuti mixed with the puree and amazing spices, this nepali sukuti recipe is bound to leave you speechless.

Dried Bombay Duck
Ingredients:
1. Sukuti/ Dried Bombay Duck: 100 gms
2. Onion: 3, medium sized, sliced
3. Tomato Puree: 1 cup
4. Green Chilli: 3, sliced
5. Ginger & Garlic Paste: 1 tablespoon
6. Turmeric Powder : 1/2 teaspoon
7. Cumin Seeds: 1/2 teaspoon
8. Chilli Powder: as per taste
9. Salt: as per taste
10. Coriander Leaves
11. Oil
Method:
Step 1:
Start off by cutting the sukuti first and soaking it for 5 minutes.
Make sure you clean the soaked sukuti first then rinse the water.
Put it in a bowl and keep it aside.
Step 2:
Heat the oil in a pan and fry the sukuti. Once your sukuti is fried, keep it in a bowl and keep it aside.
Now, add the cumin seeds in the pan.
Once the seeds start to crackle, add the onions in the pan and mix it for 2 minutes.
Step 3:
Once your onions are light brown add the ginger & garlic paste.
Mix it for 30 seconds and then add turmeric powder, chilli powder, green chilli and salt.
Mix/Cook for 1 min and then add the tomato puree.
Step 4:
Mix/ Cook everything for 5 minutes.
Once the tomato gravy is a bit dried out, add some water in accordance to the consistency you like.
Step 5:
Add the fried sukuti now and pour little bit of water.
Turn your gas on low flame, and cook the sukuti with the lid closed for 1-2 minutes.
Step 6:
Once you get your perfect gravy consistency, turn off the gas, as your dried bombay duck is ready to be served.
Transfer the sukuti in a bowl and garnish it with some coriander leaves.
Enjoy this nepali sukuti recipe with your rice and some dalle (khursani) on the side.
This is a simple and easy sukuti recipe that can be made in just 15-20 minutes.
