This Roasted Chicken Curry Recipe is one of the most popular and demanded dish in my household. Whenever we have chicken in the house, I am compelled to prepare this very same chicken curry recipe every single time. 

Chicken is one such ingredient, that people love to experiment with. No wonder we have so many chicken recipes to cook and explore. 

Now, in this chicken curry recipe since the chicken is roasted, you can get rid of the excess oil from the chicken while cooking it in the oven. This makes it a healthier option as well.

Ingredients

For Marination:

1. Whole Chicken: 1.5 kg (cut as shown in the picture)
2. Lemon: 2-3
3. Ginger and Garlic Paste: 1 tablespoon each
4. Chilli Powder 
5. Homemade Garam Masala: 1 tablespoon
6. Mustard Oil- 2 tablespoon
7. Salt: as per taste
8. Curd: 100 gms

For Curry:

1. Oil: 3-4 tablespoon
2. Sugar: 1/2 teaspoon
3. Onion: 4, big sized, puree
4. Tomato: 250 gms, puree
5. Ginger and Garlic Paste: 1 tablespoon
6. Cumin Powder: 1 teaspoon
7. Coriander Powder: 1-1/2  teaspoon  
8. Garam Masala: 1 teaspoon
9.Turmeric Powder 
10.Chilli Powder
11. Salt
12. Coriander Leaves

Method

Step 1: Marination

Wash the chicken, peel off its skin and with the help of a sharp knife, make small cuts on top of the chicken so that the marinade can seep into the chicken, making it extra juicy. 

Take a bowl and place the chicken. Add ginger and garlic paste, chilli powder, salt, lemon juice, mustard oil, homemade garam masala and mix everything well. Finally add the curd, mix well then keep it in the fridge for atleast 2-3 hours. 

Step 2:

Heat the oven at 250 degrees and place the marinated chicken inside the oven. Make sure you cook the chicken equally on both the sides i.e. 50 minutes on one side and another 50 minutes on the other side. 

While the chicken is in the oven, let's start preparing the curry. 

Step 3: 

Heat the oil in a pan on medium flame and after the oil is heated well, add some sugar. 

Step 4:

After the sugar is added, you will see some red bubbles. Immediately after the bubbles emerge, add the onion puree and mix it for 2 minutes. 

Step 5:

After the onions turn brown, add ginger and garlic paste and mix well for a minute. Now add, cumin, coriander, chilli, turmeric powder and salt. Mix everything for a minute on medium flame. 

Step 6:

Now add the tomato puree, mix well then cover the lid for 1-2 minutes. Now open the lid and mix everything well.  Once the tomato puree is cooked/dry, add 1 cup of water. 

Step 7: 

After the chicken is cooked, cut the pieces according to your liking. Now add the chicken in the curry then mix it well for a minute. Again add some water according to the consistency of the curry you want. 

Step 8:

Add some garam masala and coriander leaves. Let everything boil for a minute. Then, turn off the gas as your  chicken curry recipe is done. 

Garnish with fresh coriander leaves and serve it with piping hot basmati rice or even some parathas.

Bonus Tips:

1. Make sure the curd is thick or else you can use muslin cloth or tea strainer to soak out the excess water in the curd. 

2. The reason why sugar is added is for the enticing color that you get in the curry.

3. You can roast the potatoes along with the chicken as well and add it in the curry. You can marinate the potatoes in the same marination mix of the chicken. 

4. You can cook the potatoes, just for the first 50 minutes.
