This papad curry recipe is something that I experimented with couple of years back. 

Potatoes and papad, both these ingredients are well loved in my family, so I thought why not do something with both these ingredients together. 

This papad curry recipe is quite a treat when I don't have much going on in my pantry. 

So, try this simple papad curry recipe everyone and let me know in the comments how you liked it. 


Ingredients:

1. Boiled Potatoes: 500 gms

2. Papad

3. Oil

4. Cumin Seeds: 1/2 teaspoon

5. Onions (puree): 2 , big sized

6. Tomatoes (puree): 4, big sized

7. Turmeric Powder

8. Cumin Powder: 1 teaspoon

9. Coriander Powder: 1 teaspoon

10. Garam Masala Powder: 1/2 teaspoon

11. Ginger and Garlic Paste: 1 teaspoon each

12. Chilli Powder : as per taste

13. Salt: as per taste

14. Coriander Leaves

Aalu Papad Curry Recipe


Method

Step 1:

Start off the papad curry recipe with boiling the potatoes, peel them and chop them up into medium sized pieces. Take atleast 2 pieces of boiled potatoes and mash it well and keep it aside. Heat the oil in a pan and fry the papad and place it on a plate for later. 


Step 2:

Add cumin seeds in the pan and after it sizzles, add the onion puree and mix it up for 2 minutes or until the onion turns golden brown. 


Step 3:

Keep the gas on medium flame. Add ginger and garlic paste and mix it for a minute. Then go ahead and add turmeric, cumin, coriander and chilli powder with salt as per taste. Mix everything for a minute or two. 


Step 4:

Add the tomato puree and mix it for 2 minutes on medium flame. Now, add the boiled potatoes and give everything a good mix. 


Step 5:

Now, according to your preference, add the water for the gravy (preferably 2 cups) and mix everything well. Now, bring those 2 mashed potatoes and add it into the recipe. 

Finally, sprinkle the garam masala powder, mix it well and add the fresh coriander leaves. Then close the lid and let the aalu papad curry boil for 2-3 minutes on medium flame. 


Step 6:

Turn off the gas now and then pour the curry on a bowl. Place the fried papad on top of the dish and garnish it with fresh coriander leaves. 

There you have it folks, your papad curry recipe is now ready to be served. 


Bonus Tips:

1. The mashed potato is added in the recipe for the thick consistency of the gravy. 

2. Make sure before you add the powder/masala in any recipe, you keep your gas on low to medium flame to avoid it from getting burnt. If it is burnt, it ruins the taste of the dish.
