Gundruk Ko Jhol | Authentic Nepali Gundruk Recipe

Gundruk Ko Jhol or gundruk in itself is a very popular food item in Nepal. 

Gundruk basically is fermented leafy green vegetable which is a classic and widely consumed in nepalese households. 

It is the authentic nepali dish that nepalese love to relish with their bhaat (rice) and vegetables. 

Over the years I have seen various experimentations done with gundruk, but the one way how I like my gundruk the best would be in this gundruk ko jhol form. 

Especially with soya chunks and soya beans, the gundruk ko jhol becomes more flavorsome adding more unique tastes and aroma.

Today, I am sharing with you all this simple gundruk ko jhol recipe, hoping you will love it as much as I do. 



Gundruk ko Jhol | Authentic Nepali Gundruk Recipe

Gundruk Recipe


Ingredients:

1. Gundruk: 1 small bowl 

2. Soya Chunks: 1 small bowl

3. Soya Beans: 1/2 small bowl

4. Potato: 1, medium sized

5. Tomotoes: 3, medium-sized

6. Onion: 1, medium sized 

7. Oil

8. Cumin Seeds: 1/2 teaspoon

9. Green chilli (optional) : 3

10. Corn Flour: 2 tablespoon

11. Ginger and Garlic Paste: 1/2 tablespoon each

12. Turmeric Powder

13. Chilli Powder (optional)

14. Salt

15. Coriander Leaves

16. Ghee (optional): 1 tablespoon


Method

Step 1:

Start off this gundruk recipe by soaking the soya chunks for 5-6 minutes. 

Wash the gundruk and soya beans. 


Step 2:

Heat the oil in a pan and add the soaked soya chunks and soya beans.

Use less amount of oil for this.  

Fry it slightly for 2-3 minutes while mixing.  

Transfer them into a bowl and keep it aside for now. 


Step 3:

Now, using the same pan, add 2 tablespoon of oil and add the cumin seeds.

Now, after the cumin seeds start to sizzle, add the chopped onions.


Step 4:

Now, go ahead and add ginger and garlic paste. Mix it and then add green chilli, turmeric powder and chilli powder.  

Mix everything well.

Now, add the chopped tomatoes. Mash the tomatoes well. 


Step 5:

Add the chopped potatoes. Mix/cook it for a minute.

Now, add the gundruk, fried soya beans and soya chunks into the pan and mix everything for another 1 minute. 

Add a cup of water and cook it for 1-2 minutes with the lid closed. 

Now, take some corn flour. Put in a bowl and mix it well with little bit water. Keep it aside.


Step 6:

Open the lid. Mix once and add in the water in accordance to your preference. 


Step 7:

Now, take the mixed corn flour and add it in the gundruk. 

Cook it with the lid closed on medium flame for 2-3 minutes. 


Step 8:

Open the lid and add in some ghee. 

Turn the gas off as your gundruk recipe is now ready to be served.

Pour it into a bowl and garnish with fresh coriander leaves. 


Bonus Tips:

1. I used corn flour to avoid my jhol from being too runny. Corn flour makes the jhol (soup) thick.

2. Ghee will give that authentic nepali aroma.
