This mixed vegetable recipe comes in super handy when at the end of the week there are just random vegetables lying in the refrigerator. 

This quick and easy mixed vegetable recipe interestingly always turns out different whenever I make it. 

I think it has majorly got to do with the availability of the vegetables, because I tend to add in whatever vegetables I have at the moment. 

Sometimes, I even tend to add paneer (cottage cheese) or any kind of leftover grains and beans in this mixed vegetable recipe and even tofu, so in a way, this is quite a fun recipe to experiment with.

Mixed Vegetable Curry Recipe 


Ingredients:

1. Mixed Vegetables 

2. Oil

3. Cumin Seed: 1/2 teaspoon

4. Onion: 1, medium sized, finely chopped

5. Tomato: 2, big sized, finely chopped

6. Ginger and Garlic Paste: 1/2 teaspoon each

7. Cumin Powder: 1 teaspoon (as per the quantity of the the     vegetables)

8. Coriander Powder: 1 teaspoon (as per the quantity of the     vegetables)

9. Turmeric Powder

10. Garam Masala: 1 teaspoon

11. Chilli Powder

12. Salt

13. Coriander Leaves


Method


Step 1:

Heat the oil in a pan and add cumin seeds on medium flame. 

After the cumin seeds start to sizzle, add the finely chopped onions and stir until it turns light golden.


Step 2:

Add ginger and garlic paste and stir for 30 seconds. 

Put the gas on low flame and add coriander, cumin, chilli and turmeric powder with salt. 

Stir for 30 seconds.


Step 3:

Add the finely chopped tomatoes and turn the gas on medium flame. Stir it well and cover the lid for 2 minutes.


Step 4:

Now, based on the vegetables you have, make sure you add those vegetables first that takes longer to cook. 

Like for this recipe, add the kalo chana (black chickpeas), mix and add a cup of water and let it dry up for some time. 

Once the water is dried, add the potatoes and let it cook for a minute. 

Once the potatoes are half cooked you go ahead and add the rest of the vegetables and mix it once. 

Now, pour a cup of water and cook everything for some time with the lid closed.


Step 5:

Open the lid and check whether the vegetables are cooked or not. 

If cooked , mix it well and then according to your preferred consistency of the gravy, add some water (preferrably 1/2 - 1 cup) and add some garam masala and fresh coriander leaves. 

Close the lid and cook it until its boiled.


Your mixed vegetable curry recipe is now ready. Now, transfer the curry into a bowl and garnish with some fresh coriander leaves and finally its ready to be served.
